Bear Lake, Rocky Mountain National Forest

Amazing, how quickly time goes by. A full month without blogging, so easy to get caught up in the rush of life. I need to remind myself to take time to write, it feels good knowing that I am sharing my thoughts and photos with others and that I have a voice.
I wanted to share a special trip my son and I took last month at Bear Lake, in the Rocky Mountain National Forest here in Estes Park CO. It was only a hour drive from us, this place was just amazing to say the least. Every year my son and I go hunting for the colors of Aspen when Fall begins in the higher altitudes. This year we found a beautiful place in the mountain that has a lake and on the lakes surface was the reflection of the Aspens warm glow. It was simply breathe taking. We walked the edges of the entire lake and drank up the cool fresh air. This quickly became one of my top 3 most treasured beautiful places I have been too.

Make & Freeze Homemade Waffles

I'm a pretty frugal DIY type of gal, a single mother always looking for a way to save some money!! I don't mind doing things myself to save and making our own breakfast ahead of time from scratch saves tons! My son's favorite thing for breakfast aside from a bowl of cereal is waffles, we were having to buy a new box every week. This can add up. Why not save and make them yourself?
Not only does it save money, they are so much fluffier and tastier this way. I went and bought a waffle maker just for the purpose of making in large batches and freezing ahead of time. We have been doing this for a year now and I only have to the do the large batches a few times a year, it lasts for us. Basic staples = healthy yummy breakfast for months.

Homemade Waffles

Recipe adapted from
2 cups flour (all-purpose or wheat)
4 teaspoons baking powder
1/4 teaspoon salt
1 and 3/4 cups milk
2 eggs
1 tablespoon sugar
1/2 cup coconut oil or vegetable oil

After all the waffles are cooled off on the racks, I take them and fill them two at a time in freezer bags. I then take a straw and suck the air out of the bags and seal.

Cray Fishin'

Another Summer tradition, cray fishing.
We do this every year and Caleb brought along his best friend to do it with him.
We found a perfect spot that we return to every summer, we wait till the waters are low and these critters are hungry. We tie a cheap hotdog on a string and then onto a stick and lure them out of their muddy homes to feast. Then we slowly pull them into a area we can scoop them up with our nets. Sure way to have fun with boys! This mama is not scared too get right down there with them, I was raised in the country and did this ourselves.

Sunflower Fields

My son and I walk through these bright rolling hills of Sunflowers, we smile at each other as the Sun warms our faces. We found it. A sunflower field.
My son and I admire all the distance that is Yellow and he looks up at me
"Mom, I will ALWAYS remember this".
"I love you"
THIS my friend is what being a mother is all about, to hear these words let me know I'm doing a good job.
THIS makes everything worth it, a hundred times over.
Thank you Lord for small blessings, thank you for the beauty of life that is set here for us to admire and enjoy.
I keep up with a local weather man on my Facebook page, my son adores this guy. He loves that his job is something he wants to do one day when he is older. A role model if you will. So we were tipped off from another photographer that near our Airport here in Denver, CO were some Sunflower farms. They were a bit tricky to get too as a Google map location was not exactly set. I did find some other websites that converted coordinates through GPS to a way the phone could find it. We found it perfectly. What a gem to find. Beautiful to the eyes and soul.

Friday Favorites #17 // September Edition

I can't wait to share with you on Monday the beautiful Sunflower fields that my son and I went to this last weekend.

I looked back and its been like six months since I did a Friday favorite, its time for another one! I love looking through all the endless possibilities in the world of things. I seem to favorite Etsy as they are all hand crafted from people like you and me and not this main stream junk from the stores. Items that have meaning on some type of level. Plus ya know Christmas is like only 106 days away, so I need to start posting some cute gifting ideas! I thought what a great idea to search for things that are impacting and surrounding me in September.
This last month has been the month of cucumbers in my garden, one seed has produced several dozen of cucumbers. So yummy! {Not the soap}

With my son going back to school and joining the PTCO, things have been a bit stressful and busy the last few months. Wine has helped me get those not so good days. How cute is this rack?!

We have had a ton of bees this year, I planted cosmos and sunflowers and the large bumble bees love them. Without these pollinators we would not have our garden and food to harvest.

Now that it's cooling off, we starting hiking. One of the most things I LOVE about Colorado are the trails here. The scenic views are amazing.

I started Yoga this last month, never in a million years did I realize what a fantastic workout it is! I was sweating after and it takes ALOT to get me to sweat.

Rasberry Picking / Traditions

Here we are again, a year later.
Berry patch farms, a you pick it berry farm in Colorado.
A short 20 minute drive leads us here every year.
A tradition is a belief or behavior passed down within a group or society with symbolic meaning or special significance with origins in the past.

Something I am building for my son from the ground up, something for him to look back and remember. Because after all, isn't that what life is about? Making those lasting memories, for our children to have glimpses/flashes of these moments in time.
