Memorial Day Weekend, Spent at a Grave

Hope everyone had a great Memorial Day weekend, what did you do?

Monday my Son and I went to one of Denver's largest grave yards and took 50 American flags with us and stuck them on US Military Graves. We usually do something every year to honor Memorial Day and this year I wanted to teach my son about what the true meaning of memorial day is. I am vey thankful for all the service men and women and for my freedom. There was a dedicated section of the grave for all Military soldiers, it was beautiful. Every grave had a flag and then we added ours. It was a beautiful day and felt like my son now understands it. It was really nice to have that moment of silence out there, I crouched down and got eye level with all those stones, puts things into perspective.

Snowing in May

One thing I can say about Colorado, is the weather is so un-predictable. One day it can be 75 degrees and the next 48 hours we are in a Winter snow storm. Then the next week it rains every day. This is what is happening to us, we are going through all seasons in one month. Mainly rain, but this month we also got quite a bit of snow. I figured this may be the last snow of the season and why not take my camera and go on a "adventure". My son and I, LIVE for random adventures on trail walks. Its a large part of our life, to stop everything and go explore.

So much of the country is experiencing flooding, we are feeling some of the effects and lots of places are being shut down. We are definitely wet, are you?

My finch feeder, is bringing in tons of beautifully colored finches. We have this one Golden Finch, we named "Highlighter". They are so pretty

Earth Day Pollution Project

So we did a few things for Earth day this year and this was one of them, I seen the idea posted a few times on Pinterest and so we did the same experiment. Caleb and I walked around our neighborhood and collected small trash {with gloves} and placed the trash in a tall glass jar filled with fresh clean clear water. After we placed the trash in we sealed the lid and placed it away for two weeks. When two weeks was over we took it out and was surprised at how nasty and cloudy the water had turned. It only took two weeks to pollute the water. Molds and other bacteria's were present. The moral of the story for my son was not to litter trash on top Mother Earth. Specially our water sources and oceans. If it only took 2 weeks to pollute our small glass jar imagine our ocean and what it would do to it on a larger scale. Scary huh? Take care of our Earth, don't litter.

Rainy Days

Wow May came in with TONS of rain, its been raining almost every single day for the last two weeks. There are a few things we do love doing in the rain. One of these things is something my son came up with. He made a sign that said "The worm saving team", that's what we do when its raining. Worms like to crawl out of their home when its been raining for a long time. They do it in fear of drowning and wind up drowning in large puddles and steams anyways. Here where we live they are all over the ground everywhere! My son grabs a bucket and picks them up with sticks. Collects them and lets them go in a nice area with no water. Isn't he a good kid? I support it and walk around with him when he does it. This particular day we did it and we found a nice water stream and floated his handmade boat down it a few times. Something so simple and it makes a big impact on him. We plant on doing it again soon.

Loaded Baked Potato Soup

Its cold here in Colorado and wet, raining for days. No Sun in sight, this is May and its expected. So figured it would be perfect timing to share a very yummy soup with you all, it warms the belly and is very filling. Thick hearty goodness.

Yield 4 servings
  • 4 slices bacon, diced
  • 5 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 1/2 cups milk, or more, as needed
  • 3 russet potatoes, peeled and cubed
  • 2 green onions, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Kosher salt and freshly ground black pepper, to taste
  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
  • Melt butter in a large stockpot or Dutch oven over medium heat. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in potatoes and green onions.
  • Bring to a boil; reduce heat and simmer until potatoes are tender, about 15-20 minutes. Stir in cheese, sour cream, salt and pepper, to taste. If the soup is too thick, add more milk as needed until desired consistency is reached.
  • Serve immediately, garnished with green onion, cheese and bacon, if desired.
