Veterans Day

I want to take a moment to personal thank and honor my own family members who have served in the various branches. My family has a long line of history of serving. Thank you so much family for putting your lives on the line and for fighting for what you believe in. God bless you & America. My thoughts & prayers are with those... who have fallen.

My sons school honored Veterans day with a assemble of veterans and the kids singing some songs and waving their little flags proudly. Caleb and I made our board overnight and it got hung by the front of the school! What's really cool is Caleb's great uncle sent him his Air Force uniform for him to wear for a few hours during school. He wore it with pride

Homemade donuts

We recently went to a Apple Orchard and had some apple cider donuts there, they were amazing. So I got to thinking I wonder if I could make them. I found this recipe here on Pinterest for Apple cider donuts and they were pretty darn good. They all got ate, mostly by my son he loved them. I found the donut pan at Target!

Baked Apple Cider Doughnuts

Yield: 18 doughnuts
Prep Time: 25 minutes
Cook Time: 12 minutes
Total Time: 40 minutes


For the doughnuts:

  • 1 1/2 cups apple cider
  • 3/4 cup granulated sugar
  • 3 1/2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 4 tbs. butter, at room temperature
  • 2 eggs
  • 1/2 cup buttermilk (I used non-fat)

For the cinnamon sugar coating:

  • 4 tbs. melted butter
  • 1 cup granulated sugar
  • 1 tsp. cinnamon (or more, if desired)


For the doughnuts:

  1. Preheat oven to 350 degrees.
  2. In a small saucepan, boil the apple cider until it is reduced to 1/4 cup (out 15-20 minutes).
  3. In a large mixing bowl, beat together the butter and the sugar. Add in the eggs and mix well.
  4. Stir in the buttermilk and reduced cider.
  5. In a separate bowl, stir together the flour, baking powder, baking soda, cinnamon, salt and the nutmeg.
  6. Mix the dry ingredients in with the wet ingredients, mix just enough to combine.
  7. Spray a donut pan with cooking spray. Either pipe or spoon the batter into the each mold until they are about 3/4 of the way full. Bake for about 10-12 minutes or until a toothpick inserted comes out clean. Allow doughnuts to cool before coating.

For the cinnamon sugar coating:

  1. Combine the sugar and cinnamon in a shallow bowl.
  2. Using a pastry brush, brush the melted butter on both sides and in the middle of each doughnut. Dip and roll the doughnut in the cinnamon sugar mixture to coat. Repeat with the remaining doughnuts.

Minecraft Birthday Party

My sons 8th birthday party was over this weekend and we all had a blast, this years theme was Minecraft. I was surprised to find out that the makers of Minecraft have not released rights for many things like: birthday cakes at grocery stores, party supplies etc. So if you want a Minecraft theme, your going to have to make things up and get crafty or find someone that knows how.

I went with basic Blacks and Greens for creeper colors and then drew on the face on the party bags, one of our favorite party treats in the bags were these mine craft sword necklaces from Etsy shop LittleShoppeofPixels, they are 100% customizable and the biggest hit out of the bags.

Another favorite from the goodie bags were these minecraft character printable double sided bookmarks. Easy to assemble, just make sure you use some good glue to hold it all together. We also used a heavy card stock to hold up better and not bend once the glue was on it and drying

For the party decorations I went on Pinterest and did a Minecraft Birthday Party search and found tons of awesome ideas, one of the ones we did was create a table with different foods that represented  elements from the game. I found a website here that we used for printable food cards and water bottle labels.

I also found a really cute idea for one of the game elements, to make homemade rice-crispies and dye them Black for Coal. I followed the recipe on the box and then bought the spray tint from Walmart in Black, these were also a huge hit and were told them were good. Speaking of Walmart, I purchased a balloon helium tank for around 22$ and it blew up all our party balloons, as well as a half tank left over for next year! No more paying money for the stores to do it, its super easy and cheaper

BTW Toys-R-Us has some pretty awesome Minecraft toys that you don't see at normal stores. So for Caleb's cake, as I mentioned above most places don't carry Minecraft cakes. I had to start calling around local cake shops that could custom make one for us. I found someone local here cakesbykaren that made the Minecraft cake, Caleb loved it. I bought the topper figurine at Target. The original plan was to add 3-4 characters, but I forgot all of them but one at home. We were almost late to our own party this year!

Halloween at Grandma's in New Mexico

It was a first time ever to spend Halloween at Grandma's house {my mothers}, in New Mexico. We had plans to come for Thanksgiving, but my mother hip replacement surgery was re-scheduled to Thanksgiving time. Caleb had a week off from school, so we moved the time up. Rented a car and made the drive, was great being with my family. My mother, father and brother all live in NM. We stayed busy and had some seriously well needed laughs all around, always good times when we get together.

We went to the zoo Halloween day and was totally empty {just the way I like it}, this is the nicest zoo I have ever been too! Beats our Denver, CO zoo!
