The BEST Playground, ever.



We were on a hunt for a nice playground and found this one on Yelp {I use this often to find fun places}and it was by far one of the best playgrounds we have ever been too and that says a lot! Its called Centennial Center Park and is located in Centennial, CO. We have been too a lot of playgrounds in our time, after all we live in a very large city and there are tons spread out. This one was awesome, so many different cool toys to play on. Lots of slides, climbers and a combined waterpark. This place was booming with movement and lots of birthday parties, figured we would get some time in before the weather won't let us anymore. Our evenings are getting cooler and sooner than later we will have full Winter weather here in Colorado.

Homemade Pancake Mix


My son Caleb's favorite all time breakfast is pancakes, he requests it almost daily and is eating at least 3-4 pancakes. Buying the frozen kind was adding up in money per week and not to mention a little questionable as to the ingredients that were inside them. I watch what goes into my sons body and monitor most foods he eats, making sure there is no BHT, High Fructose Corn Syrup, Red Dyes etc. I'm VERY aware of GMO's and what's good and what's not. I do a lot of my shopping at Sprouts and Wholefoods to avoid the poisons in some of these foods. Did you know my son is almost 8 years old and just this last week I allowed him his first and only Hostess cupcake? We just don't buy these kind of things..

So I went on another "money saving" how to make your own pancake search on Pinterest and found this wonderful recipe here. This is now a regular staple in this house, I have since make dozens of pancakes with these natural cheap ingredients. They are thick, yummy and yields quite a bit. I store the leftover batter in the fridge for the next morning, they aren't as fluffy but equally yummy. I bought a couple storage containers and keep the dry ingredients in our food pantry, so easy and now a major go to.

Do you make your own pancakes from scratch?

Here's what you'll need:

9 cups of flour
4 1/2 teaspoons of salt
1/2 cup baking powder
1 cup of sugar

In in a big bowl, mix all your ingredients together and store in a container

When you're ready to make pancakes, just stir together 1 cup of  pancake mix, 1 egg, 1 cup of milk, and I tablespoon of oil.  For Waffles: do the above but add 2 eggs!  This makes about 8-9 pancakes or 6 waffles.
Also can add in other ingredients to make it that more yummy, like: chocolate chips, applesauce, nutmeg, nuts etc.

DIY Laundry Softener



I have been making my own laundry soap for almost 2 years now and I love it, it works great and the best part is the idea of all the money I'm saving! Interested on how I make my soap? Here you go homemade laundry soap

I got to thinking, its great I'm saving money with my laundry soap, but what about the pricey laundry softener that I use? It was time to hunt down a DIY recipe post on Pinterest and I found this one here. I made it and have used it for near 10 loads already and it works great and now I'm saving even more money and don't we all like that?

The recipe:
6 cups hot water {I used boiled water}
2 cups white vinegar
1 bottle of conditioner {any conditioner, one that smells great & that’s cheap!}
In a bowl mix the hot water and full bottle of conditioner. Stir until completely mixed & dissolved. After that pour in the vinegar and mix it all together. After that pour your laundry softener into the container of your choice. I saved my last softener container and used that. I also treat this softener like a store one and fill that cup up according to the laundry load size.

Happy 1st Day Of Fall


Today is the official first day of fall, Happy Fall!!

We decorated for Fall over the weekend, this is my favorite season of the year. This year is extra special because it marks the first year my son and I have a large space to decorate in! Last year we were very limited in what we could do living in a 700 sq foot place makes it hard to add in decorations for seasons. Don't get me wrong we did, but now we have MORE space to add things. Yay! We are finished for now, however in the next 2 weeks we have another tub to pull out for just strictly Halloween d├ęcor! Leaves are starting too change here in Colorado and next weekend we are planning a trip to Estes park in the mountains to view the changing Aspen.

Inspirational Rocks // Word Rocks



Inspirational rocks, that's what we named them. There is a tradition in my household, between my son and I. Every year we collect plain flat rocks and take them home to paint them and write inspirational words on. Once we are finished we take the rocks to a local park/playground and hide them in spots for other people to find. In hopes that someone who may need a slight pick me up will find it. You never know who needs to hear that message or see something good. Caleb reminded me this year that we had not created them, we always have so much fun painting them together at the kitchen table.



How to:
Find some smooth flat rocks, skipping stones shapes are best!
Wash rocks firs if they are gritty and let dry
We use acrylic paint so if it rains the paint won't run
Basic brushes will do, but make sure you have some fine tips too for the smaller details
Paint rocks all colors with messages and images
Let dry {this part can take some time}
Find a local park and hide them


This year we hid them in a very popular kids part, so I'm sure we made a lot of kids smile that day. We always walk around before we leave, to see if any were missing and half were already gone and tucked away in someone hand or pocket. Life can be hard and sometimes there are those little things in life that bring a smile to another's face. We love being part of that tale.

Kale Pesto with Toasted Walnuts + Homemade Pesto



I bought the coolest cookbook at Barnes and Noble last week, fifty shades of kale. I am trying to incorporate more healthier things into my meals and wanted to take the extra step and add in more cooking ideas with super foods. I love cooking and coming up with new meals every week, I made it a habit to include at least 1-2 new meals per week. Kale is one of those foods that I just didn't know what to do with it, other than smoothies. This book solved it and notice the irony of the title of the book? I was snorting and laughing at the bookstore from the title. Clever.

So I found this book and have already tried four recipes from it and every single on of them have been hits and wins!! No disappoints as of yet. This meal today was adapted from the book, my goodness it was yummy and now is on my regular rotation of meals.

Adapted from: 50 Shades Of Kale

2 cups packed torn kale leaves, stems removed
1 cup fresh basil leaves
teaspoon salt
1/4" cup extra virgin olive oil
1/4" cup walnuts
4 cloves or garlic, chopped
1/2" grated parmesan cheese

In a food processor, combine the kale leaves, basil leaves, and salt. Pulse 10 to 12 times, until the kale leaves are finely chopped. Drizzle in the olive oil. Scrape down the sides of processor. Add the walnuts and garlic and process again, then add the cheese and pulse to combine. Toss with your Favorite Pasta and serve immediately
