Merry Christmas // Our Christmas 2014

Christmas eve

Did that really just happen? Did another year just fly by? All the prepping, shopping and getting ready for it to be over in a blink of a eye. We had a magical Christmas this year, Santa came and visited and left behind his boot prints in our living area!

We then opened the stocking Santa left

and had a very special breakfast, I got this idea from Pinterest and my son loved it. You dye the pancake batter green with food coloring and then layer it to look like a tree and top it off with a star of some sort. I carved on from a Yellow apple and then sprinkle the pancakes with candies. FUN.

After a change of clothes and a much needed cup of Joe we opened our gifts, my mother and father live in another state and Christmas Eve we opened a package that had a video camera in it. So we all opened gifts over the camera on Skype!!

For this next picture I feel the need to explain the WHY IN THE WORLD DOES THIS KID HAVE SO MY TOYS?! So here it is, he is my only, he is the only grandchild, only nephew, only a lot on my side of the family and...These gifts are from: Santa, me, his dad, his grandma, grandpa, uncle, great uncle, my cousin etc. etc. He is loved and he is blessed, Amen.

So then my son left for a few hours to go and do his Christmas with his dad and his other grandma/grandpa. The kid had 3 separate family Christmas's this year. I took the time to un-wind and enjoy some quite time.

So this year was my first year ever to cook a ham for us, I found a amazing recipe here. The glaze was soooo good and sweet made the ham very tasteful
So that's our Christmas, it was a busy one with my kiddo in and out all day between his dads and friends house. I didn't mind it one bit. We kind of create our own traditions as we go and that's ok./ Hope you all had a very Merry Christmas 2014!!

Merry Christmas Eve + Candy Cane Festival

Merry Christmas Eve, what are your plans for today?

My son will be leaving with his Dad in a few and I'm going to get a little work done. Yep, working on Christmas Eve. That's ok what else would I do? We are super excited for tomorrow and will get my son the entire day. Hope you all have a very merry Christmas.

We attended last week Denver's Candy Cane Festival at Hammonds Candy Factory. We got a tour too see how the candies are made and enjoyed tons of arts and crafts. Very fun!

Ice Skating

We have been ice skating only a handful of times, its super fun but hard work if your not use to it. Caleb started off holding onto the wall and at the end he was not using the wall. I still was. I was gripping on to the wall for dear life. God help us all.

French Onion Soup

I'm re-visiting a post from a few years ago, because its that good. May be one of my all time favorite soups. Homemade French onion soup! Its soup weather and this one will not disappoint. Its so thick with flavors and topped with gooey cheesy goodness and flakey bread. I had enough leftovers to enjoy this disk the next day

French Onion Soup
  • 8 Tbsp Unsalted Butter
  • 4 Pounds Yellow Onions
  • 2 Tsp Sugar
  • 2 Tbsp Flour
  • 1 Cup Sherry Wine
  • 6 Cups Beef Stock
  • 4 Tsp Fresh Thyme or 1½ Tsp Dried Thyme
  • French Bread
  • Gruyere Cheese
First peel all of your onions. Once this is done, get your biggest pan/pot on medium-low heat, with your butter in it. Next, slice all of your onions, once you slice all your onions  put them in your pan/pot with the sugar and begin the CARAMELIZATION!  If you don’t have very large pans, feel free to split the butter and onions up and get two going at the same time, which will speed up the process! {I did this~}
caramelizing the onions will take 1-2 hours, Let the onions caramelize, stirring only as often as needed, without having them burn or stick to the pan, you don’t want to stir too often, as this will prevent them from browning and caramelizing. Once they become a deep golden brown, like in the picture, turn the heat to medium, and after a minute or two, mix in your flour and then add your sherry, allowing it to cook for a few minutes, burning off the alcohol. Next combine your onions, beef broth and thyme, bringing it to a simmer, allowing it to remain there for 30-45 minutes.
Put your oven on broil, grab some oven proof bowls, your cheese and slice up some French bread (small enough to fit in the bowl) and toast for a few minutes. Fill your bowls with some soup, top with the bread and a generous amount of Gruyere! Place in the oven and broil until the cheese is gooey and bubbly! Let cool for a few minutes

Christmas Tree Farm

I have always had artificial Christmas trees, so much easier to store and break back out yearly. We have however had one real tree when my son was a baby, I loved the smell of a real tree. This year we decided to do a real tree and the first that my son will be able to remember. I didn't just want any ole' tree, so we found a you cut it tree farm here in Colorado. Was only a hours drive and was totally different that you would think it looks like, not fairytale'ish at all . Out in the middle of no where, trees spread far apart, growing in the wild. A lot had two trees growing into one, so it wasn't a easy task finding one that would due for us. Lots of wandering and walking around, in freezing temps. Was very cold and windy, our eyes were watering and running down our faces. But it was worth it, we found one that worked for us. 6 foot with lots of bare spots {kind of a Charlie Brown tree}. We used a saw and cut it down and tied it to the top of my 4 door sedan car. It made it home safe and its all decorated and ready to go. Would I do it again? Maybe. I think people should do it at least once in their life

Thanksgiving Weekend

I didn't get a chance to post our Thanksgiving, so better late then never! My son and I spent our first Thanksgiving day together, alone and we did great. Last year my son was with his father and their part of the family and I was all by myself. It was a adjustment and a bit of a shock the first year to be alone, as I'm always use to being around a larger crowd one way or another. This Christmas my son will be with his dad and again this is a first for me, always lots of firsts.

So I baked turkey, stuffing, sweet potato casserole, carmalized brussel sprouts, deviled eggs and a frozen pie. It was all very yummy. I had seen this idea on Pinterest, to cover the kitchen table with this printable draw together thanksgiving set, took it to Fed Ex and was only 10$ to print it to fit the size of our kitchen table. It kept my son and I both busy for days after Thanksgiving. Very fun and artistic
