Message Rocks

A free, totally fun activity to do with your child. I was on the hunt for something "free" for us to do and remembered last year this was a hit so we did it again this year! Message Rocks, are a wonderful way to place "positive" words and images in hopes that it will lift some one's day and make them smile. You paint each rocks and then once dry, go to a park/trail and hide/place them in different spots. Like: bushes, cracks, fences, ground, flowers etc.
 I found that using acrylic pain is best, it dries nice and wont wash off

The rest of our Summer

Again, because so much happened at once its hard for me to blog about it in separate posts! Will all add here. We have been so busy and just trying to get into the flow of things again. Caleb started first grade! Glad to say he has already made a few friends, not sure why I ever even worried? Its a new school and new people, but my kiddo has a magnetic personality and attracts friends in no time at all. If only it were this easy for me.
we went to several farmers markets this year, anytime I see them I shop them. Not only is the food good for you but I also like to support local businesses anytime I can.
I promised Caleb all day yesterday that we would go after dinner and have ice cream at coldstone. So packed up and knew it was raining a little. A little turned into ALOT. One of the largest storms I have seen here... in Colorado {We just don't get those good ole storms like in Tx}. It was coming down by the bucket fulls, sideways raining sounding like little rocks thrown at my car. My cell phone starts vibrating and flashing while driving letting me know we have a flash flood. Tree limbs all over the roads. I have never driven in weather like this for any reason let alone some ice cream! We made it to the shop and was thinking, omg these people are going to think I'm nuts! Nope. the store was packed full of people, a line out the door. See? Other people had to have it too HAHAHA. There was no where to sit, so we ran out the car and ate our wet and melting ice cream. Caleb asked "is the rain mad at us?"

There are no beaches here in Colorado, just these beautiful big adventurous mountains. So we have to improvise and go to a man made beach. One that's here in our City, at a local Park. We spent the day making sand castles and collecting tiny sea shells.

New Pets


So my son Caleb has asama, which can be triggered with his severe allergies. His allergies are to dogs and cats, which breaks my heart. I grew up with critters and lots of cats. He loves cats. So we had him panel tested for other small rodents. He was in the clear. We tried our hand at guinea pigs last year and I found out I was allergic. So they had to go. This year and for the last few months we have adopted 4 pet fancy rats. Now before you star thinking "ew" and "no way" like I did. I want you to know for younger kids these animals are AMAZING. They are smart, sociable and clean. They clean themselves all day. They don't "stink" if your taking care of their cage right and the best part? Mt son ADORES them and looks forward to spending time with them daily.
The first one we got as a "trail run" and was a older rat we adopted from craigslist about 5 months ago. Her name is Templeton, since then she has aged and is only expected to live another few months. We knew this going in and didn't matter. We would love her the same. Then I found a rat rescue/breeder online and obtained our other 3 baby girls Margaret, Diamond and Ruby. We have a wonderful setup for them in a 3 story cage and they get "free roam" in a blocked off part of hall with my son daily. They are on a special rat made diet, that's healthier than store bought and then lad blocks that are organic. Plus awesome greens/fish etc, for dinners. I have learned them one trick so far and that's for them to come to me when I make a "kissy" sound with my mouth. I'm enjoying them just as much as my son!

We went to a old homestead tucked in the heart of Denver. Lots of educational value and we toured one of the older homes. Rich historical artifacts and we got to ride a old wooden carriage pulled by a gorgeous male horse.

Live Butterflys

This is our second year to do the insect lore "live butterfly's" habitat. Caleb loves it, this year we had double the butterflies. You receive the caterpillars in the mail in a cup and then they hang themselves upside down and you move them to the netted home. From there it takes a week or so for them to start hatching out. Its the neatest thing to witness one coming out. But they do it so fast you have to keep checking back once the first one hatches.

Fried Green Tomatoes

All Summer I craved theses, all summer I asked farmers market stores like spouts etc. if they would ever get them in stock so I can make fried Green tomatoes and every response was the same, no. Just when I was getting over it and moving on, I spotted a entire table full of Green tomatoes at a farmers market in this shopping center! Guess what I finally got to make? Green fried tomatoes and oh my gosh were they so good. My son has a phobia of tomatoes in general he just wont eat one. He ate 5 of these!! I didn't tell him they were tomatoes but I actually had to cut him off {to save room for dinner} Found this one here

Easy Fried Green Tomatoes
1 cup ground cornmeal
1 cup flour
1 tablespoon garlic powder
a pinch cayenne
1 1/2 cups buttermilk
a pinch of salt and pepper
4 large green (unripe) tomatoes, cut into 1/2-inch thick slices, with the ends removed
1/2 cup vegetable oil
1 tablespoon unsalted butter
-homemade ranch dressing to dip

How-To Directions:
In a large bowl, combine the cornmeal, flour, garlic powder, and cayenne together. Pour the buttermilk into a separate bowl and season with salt and pepper. Dip the tomatoes in the buttermilk and then dredge them in the cornmeal mixture, coating both sides well.
Place a large cast iron skillet over medium heat and coat with the oil. When the oil is hot, pan-fry the tomatoes (in batches if necessary) until golden brown and crispy on both sides, about 3 to 4 minutes on each side. Carefully remove the tomatoes and drain on paper towels. Serve with ranch dressing.
