Homemade Peach Cobbler

I love to cook. We spend so much time in this life eating, why not make it something those taste buds can really enjoy? Over the last few months I have been having a strong craving for two things, fried Green tomatoes and peach cobbler. So Caleb and I set off to a local farmers market and scored some Organic corn, green tomatoes and peaches! I found this fantastic recipe {here} for homemade peach cobbler, it was so good. Definitely a keeper in my book!

For the filling:
  • 4 cups peeled* and sliced fresh peaches – about 8 or 9 peaches, depending on size
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon flour
* Wash your peaches, then score the underside with an “x” using a sharp knife
Blanch the peaches in boiling water for about 60 seconds and then dip in an ice bath.
You should then be able to remove the skins, peeling back from the points of the “x”
*this was a serious time saver and so easy!

For the crust:
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons brown sugar
  • 4 tablespoons unsalted butter, cut into small pieces
  • 2/3 cup buttermilk
  • 1 tablespoon brown sugar, for topping
  • whipped cream or ice cream for serving (optional)
Preheat the oven to 425 degrees F.
Combine all dry ingredients (flour, baking powder, baking soda, brown sugar) for cobbler crust in a bowl, and set aside.
grease a 1 1/2-quart shallow baking dish. Place the sliced peaches in the dish and sprinkle with brown sugar, cinnamon, vanilla, and flour. Mix gently with your hands and spread evenly in the baking dish. Bake for 10 minutes.
While the peaches are cooking, cut the butter into the awaiting dry crust ingredients with a pastry cutter or your fingers, to make the texture like coarse crumbs. Add the buttermilk and stir to form a soft dough.


Remove the peach mixture from oven and drop rounded spoonfuls of dough on top. Then sprinkle the top of your cobbler with the remaining tablespoon of brown sugar, and return to oven. Bake until the fruit is bubbly and crust topping is golden brown, about 20 minutes. Serve warm with ice cream.

Summer Catch Up

Pic from one of my bike rides, I have been going twice a week and increased my miles to 6-7 every trip.
Lets do some summer catching up, Caleb's summer is whizzing by. We are having so much fun and mommy is making sure its packed with fun things for the both of us to enjoy. Swimming, biking, fun events every month.
Caleb has his "back to school" ice cream social on August 5th! WOAH that happened too fast! I enjoy him being home with me and not having to wake up at 7:30 a.m.in the morning, so nice to sleep in. We got his backpack and lunch kit, his school clothing and shoes are done. Just need the supplies! He's excited.
I found a wonderful church here in my city, its such a relief to attend and know its my new home. Before I had searched for years and had not found one we liked till now.

Caleb had swim lessons, then I have taken him to the pool many times so far this summer

Our first time doing a drive in movie! This was seriously amazing and so cheap!
We are going back soon

Butterfly Pavilion

Every year we land here, the butterfly pavilion. We get the hold a tarantula spider and sit in this large room with thousands of butterflies floating by you. Its like a dream, this is a slice of heaven for me. One landed on Caleb's hand, he was offering his arm as a resting branch in front of a air blower vent.

Am I late or what? 4th of July Pics

HAHAHA what a procrastinator! Yep. We had a good one, actually meet up with Caleb's dad {X} to pop some fire works in the back yard, then watched a fireworks show our city was hosting. Pretty good day for Caleb, best part is I got to watch him burn through 6 boxes of sparklers. Poor kid has never done this before, only tested on for the first tie last year. I grew up on these things, too bad fireworks are illegal here in this part of CO and has always been. Caleb does know what it means to do the full run of it, just to watch above.

Denver Aquarium

WOW summer is zooming by! Its happening way to fast and we have been so busy with summer activities. I haven't been able to post as often as I would like, trying to enjoy every moment I can outdoors with my kiddo before he goes back to school.
Its tradition to go to Denver's aquarium every summer, so we made our yearly trip. Caleb likes the sting rays, you can buy a little cup with fish and feed them. They have two rooms I could sit in all day, one is a huge tunnel with fish all around you. The other is a giant room with sharks swimming around and under you.

Colorado Renaissance Festival

Its been a good 5 years since the last time I went to a Renaissance Festival, Caleb went but was to young to remember. So we were over due. We went, was nice to get out of the house. Was a little cloudy that day, which was fine so no direct hot rays.
Caleb was a little under the weather that day, was hard to get him engaged. A little info update: my son was recently diagnosed with ADHD, something that I already knew. I struggle daily with hyper activity and other tendencys. It has been brought to my attention by several teachers in his school that he was overly hyper. So I decided to try some medications to help him out a little, lowest dosage on the market. The ones he's on shows amazing strides for Caleb, he's calmed down and is now focusing on whats in front of him{its amazing, I cried seeing the results} however it makes him really tired.
So, normally being at this kind of event {festival} I would have to hold on to his arm/hand to keep him from bolting and running off etc. Was not the case at all, he wasn't interested enough. BUT I think he enjoyed it, just didn't communicate it with me. I bought him a wooden sword and that was the first smile I got from him the whole day. We ate yummy turkey legs and had some chocolate ice cream {another smile}. It was over all a nice and peaceful day for us.

Outdoors Kids Scavenger Hunt

Scavenger hunts are a great activity for summer, its during these months that we try and find things to do weekly to keep us busy and engaged. I had seen this idea on pinterest and decided to make my own outdoors scavenger hunt. I found all the images on the net and then made a collage and printed it on paper, taped to bag and Caleb was ready for the hunt. I took him on one of our favorite trails to find all the goodies, he found all but one! Took a few hours and got us out of the house and away from electronics.
