parker days festival

 
 
Summer is usually packed full of activities for Caleb and I, its the only time of year that allows us to enjoy the outdoors and get some sun kissed skin!
 
You have any plans??
 
Living in Colorado we just don't get enough good weather and before we know it its fall/winter again for a very long time. Its very important to enjoy the outdoors daily for us.
 
So, this was one on my calendar. Parker Day Festival. First time going, wont be the last. I must say this had to be the largest and the best one I have ever been too. Three separate parts for carnival rides, vendors galore, just so much too do and see!

Lego Mini Figurines Storage Solution

 
As I was cleaning out some supplies in my shop and re-arranging beads etc. I decided to down grade and try and make more room by getting rid of one of my layered bead totes. Got it all cleaned up and thought "hmmm this would make a great Lego figurine storage case!" so that's what I did! So simple and easy, this same case can be found at hobby lobby and then use this coupon here to get 40% off of it if it not already on sale! We used ours for Lego mini figurines, gems, weapons, animals and those tiny little pieces. So now they wont be buried deep in with the larger bricks, plus Caleb favors his guys more than anything else. Easy access!

farmers market

 
Was on a hunt for a farmers market, we already shop Sprouts {farmers store market} But I also equally love vendors that setup a table full of fresh produce. There is no other like fresh and makes me wish I was sometimes at home still enjoying pickings from my dads garden.
 
I found this one on Yelp and headed out, it was OK! Not nearly enough food vendors there. It got us out for the day, so mission accomplished. I did score some organic applesauce, organic dried apple snacks and a bottle of locally made wine.

my sons graduation


 
I'm just a little late with this post! I had the pictures on my computer and wanted to share, Caleb graduated Kindergarten last month. He was so sad too see it all go, we moved so he had to say good bye to all his friends and teachers. I feel bad up rooting him and re-planting in a new school but hope it goes as well as this last year did.
 
 We got his teacher a adorable gift, was a soap set purchased here on Etsy
 
 
Caleb's dad and grandmother also showed up for support, I surprised Caleb with a few graduation balloons, stuffed animal, 2 books and a Lego graduation figurine. I cried several times, here I thought I could contain myself {yea right}. Then we all had lunch outside and it was over.
 
A few days ago I took Caleb and I for a bike ride to his new school, its a lot smaller and older. Hoping maybe seeing its smaller maybe it will be OK? His old school was huge, new and all the best of technology. I'm going to seriously miss his old one. BUT life changes and we have to change with it.

first soccer ball

 
I played soccer for 7 years, started off in the 6th grade and was something I enjoyed all the way through 12th grade. I miss the sport dearly, only now there is no way my body's up for that kind of challenge.
 
So, I bought Caleb his first soccer ball. We live right behind a school field with goals, plan on taking him there weekly during the summer months and let him go for it. Maybe next year I can enroll him into the sport.

Homemade Corn Dogs

these are so so easy to make and yummy! Nice and crunchy, mmm... Caleb loved them and ate two. Better than store bought ones, I used organic real beef dogs and made them healthier than mystery dogs at the store. Found this winner here

Ingredients

Instructions

  1. In a large bowl, combine cornmeal, flour, salt, pepper, white sugar and baking powder.
  2. Add milk and egg to the bowl and whisk well.
  3. Heat oil in a large pot on stovetop until it reaches 350 degrees F.
  4. While oil is heating, insert wooden skewers into hot dogs.
  5. Dip/roll skewered hot dog into batter until completely covered.
  6. Cooking 2-3 corn dogs at a time, cook in oil until golden brown in color, about 3 minutes. Set on paper towels once cooked to drain off any excess oil.

Green Smoothie

Caleb helped aid me in this one, hes so excited to see it posted on the blog today. Summers, almost here full throttle and that means lots of smoothies in this household. Its a wonderful way to get more fruits and vegetables incorporated into our diets! PLUS they are just so yummy, what a awesome mid-day snack or lunch.
 
ingredients:
spinach leaves
2 bananas
strawberries
ice
organic pineapple juice
pineapple
 
{I recommend using all fresh fruits and vegetables}
 
how to:
blend 4-5 ice cubes in blender, add in handful of spinach, add in few slices of pineapple, add in 2 whole bananas, 4 strawberries, 1/4" cup pineapple juice. Blend it all together until smooth and enjoy!!
 
We love this one.

gardens

 
we went to Denver botanical gardens, one of our favorite spots to just chill and relax. Get away from the big city and back to a little bit of nature. Times like that make me miss home. Has been a busy week, memorial weekend. Caleb's dad had him for the evenings and I would take him for the mornings, I plan  to bbq some salmon tomorrow seeing Caleb has of for Monday. Beautiful weather and perfect time of year to spend almost every day outside. Wouldn't have it any other way.
