Sweetheart Dance

I kept looking back at him while driving and smiling, thinking to some lucky lady will marry this handsome boy someday and I am SO PROUD.
Caleb had a sweetheart dance to attend and I wanted him to go in style, I put together the cutest outfit all found for under 9$ at the local TS {even the tie} it all looked brand spanking new and fit him perfectly. Before the dance, I stopped at King Scoopers and got him a Red Rose to pin to his shirt to match his tie. This is about the time I started to tear up
We went and had a wonderful night, we were each others "dates". Took plenty of pictures and went home happy.

Tomatillo Salsa and Chicken

Ok so this is one of those meals where you had every intent on making it like the instructions said but, instead you went totally in a different direction. SO, this ones how I made it because it turned out so yummy. This is NOT for the faint of heart when it comes to spiceyness. Be prepared to get your socks blown off, gaurenteed to clear up any stuffy noses.


For tomatillo salsa
  • 1/2 lb fresh tomatillos, husks discarded and tomatillos rinsed and quartered
  • 3 fresh green serrano chiles, coarsely chopped
  • 1/4 cup chopped white onion
  • 3 garlic cloves
  • 3/4 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons vegetable oil
  • 3 tablespoons finely chopped fresh cilantro

For chalupas
  • 1 to 2 tablespoons vegetable oil
  • tortillas 
  • 1 cup shredded cooked chicken (from 1 chicken breast) I like to slow cook mine, shreads beautifully and then I add a little salt and pepper to taste with my chicken
  • 1/3 cup shreaded (Mexican cheese) I bought mine at sprouts 
Make salsa:
Purée tomatillos, chiles, onion, garlic, salt, and water in a blender until smooth.

Heat oil in a 10-inch heavy skillet over moderate heat until hot but not smoking, then carefully add tomatillo purée (oil will splatter) and simmer, stirring, until thickened, 8 to 10 minutes. Stir in cilantro and simmer 1 minute.

Make chalupas:

Heat 1 tablespoon oil in cleaned dried skillet over moderate heat until hot but not smoking, then briefly cook tortillas. Transfer tortillas with tongs to paper towels to drain. I used a cookie cutter shape to get the squares, you can you whatever you want to get a nice shape to hold the toppings.

Spread each tortilla with about 1 teaspoon salsa, then top with chicken, cheese and I like sour cream on top. Serve immediately.

monster truck jam

For weeks Caleb and I would see the commercials on T.V. about the Monster truck show that was coming here to Denver and every time Caleb would come get me or pat me on the arm and point at the t.v. He really wanted to go....So I bought the tickets and surprised him with them on the table the day before the show, he couldn't believe it and was so happy. We went and had a blast, I have never been before either so didn't know what to expect, we were in the first section mid way up, so good seating. I came pre-pared with ear plugs and used them halfway through, Caleb used his the entire time. Those trucks had such a powerful sound, loved it. May need to make this a tradition for us!

 Its right around this time of year that my soul becomes un-settled in the since of needing to be out with nature, to touch/smell and be part of it. Nature lover by heart, I start to get a little "stir" crazy around February/March and even more so in April {when it can still snow}. Things don't "Green up" Till around mothers day or a little later.

 In my option, is just plain crazy and not cool with me at all. 

Caleb and I both look like a White sheet and our faces have not seen sun in awhile, except for today. {Thank you, Lord.} 

We had a decent day and no snow on the ground, so what better to do than spend it outdoors at a playground. Caleb got to play and fly a little airplane of his. Worked for us, heck we'll take any sun we can get. 

 My sweet brother purchased me this Philips Golite, which produces the same light from a clear sunny day. Its suppose to help with your body's natural minerals etc. I use mine often, being that we live in a mostly winter state. After using it for one full winter last year, I had myself tested in the Vitamin D area and passed with flying colors {so I guess it works!}

Chicken Pesto Sandwich

Oh My Gawshhhhh This is so friggin' yummy! Going in, I had no clue what pesto was, or what it tasted like and I can tell you its super tasty. A light chessy, herb flavor. This is now a regular staple for this family, even the mighty picky eater 'sir caleb' ate every last bite. I was shocked. This was found here

Chicken Pesto Sandwich:
Yields 3-4 servings
  • 2 cups shredded chicken breast
  • 1/2 cup basil pesto, or more to taste
  • 1/4 cup Greek yogurt
  • Kosher salt and freshly ground black pepper, to taste
  • 1 baguette, cut into 3-4 equal pieces, toasted, for serving
  • Arugula, for serving
  • Sliced tomatoes, for serving
  • 4 ounces mozzarella, thickly sliced
In a large bowl, combine chicken, pesto, Greek yogurt, salt and pepper, to taste.
Serve sandwiches on baguette with arugula, tomatoes, mozzarella and chicken pesto mixture.

Our Valentines

Day before Valentines, Caleb got to open his box from his grandma {my mother}. She sends him goodies any chance she can get and loves her for it! So he enjoyed tons of goodies the day before, then for Valentines he did his first "swap" with his class, the bug valentines got passed out and he came home with a bag LOADED with fun and beautiful items. Such a special day for him, love seeing it. My mom and I both sent Caleb his first valentines class cupcake gram that they special deliver to his class, anything to make him know hes thought of and loved. Caleb also got to give his teacher a box of chocolates, he was exited to give it to her. What do you think of my first attempt at Tye dye shirt, it was suppose to be a heart in center didn't quite turn out still cute.

One from my childhood, pizza on Bread

I grew up with this one, my mother made it for us all the time and now I make it for our family. Its easy and tasty, so much better than boxed pizza and hits the spot.

  • pound of beef, or a little less
  • loaf of french bread
  • fixings for pizzas: onions, peppers, mushrooms, pepperonis, olives etc.
  • grated bag of mozzarella cheese
  • jar pizza sauce


  1. Cook up your beef on stove top
  2. cut the loaf in half and bake in oven for 5 minutes on 400 degrees {just to get a little toasty}
  3. take loaf out and spread on half the jar on one side and other jar on other side of loaf
  4. take your toppings and spread them evenly, top those with cheese
  5. bake the loaded bread for 5-8 minutes, until cheese is melty
That's it, easiest meal EVER. We like ours with Ranch dressing, for dipping. Enjoy.

Calebs' Valentines Cards

I can remember when I was in Elementary school in 1986, Valentines day was one of the funnest holidays for me as a kid. I was lucky enough to have teachers who loved to celebrate it just as much as I did. The wall would be lined with decorated paper bags and that special day you never knew who would give you a Valentine's card! It was so fun and this is our first time ever for Caleb to now take part, times have changed a little and not sure what to expect?

So Caleb and I sat down and the kitchen table and "made" our cards, sure I could have taken the easy route and just bought them at walmart for 4$ ....But isnt this the cutest?? Found and spoted this amazing idea from and HAD to try it. Caleb got a kick out of the consept, hes excited to give them out.
It was super eays and quick, plus its handmade and orginal! She has the printable for the jars, then you buy the bugs and we hot glued ours on. DONE!
