Crock Pot Chicken Taco Chili
Got this wonderful recipe from photo a day blog, it turned out just perfect and so simple! I have had a crock pot for years and maybe once a year it would get used, now that I have discovered pinterest I plan on using it A LOT more often and sharing my successes and failures. This one was a thumbs up! I added it to tortias, with cheese and sour cream and tweaked the recipe a tad.
 
 

half onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 16-oz can tomato sauce
10 oz package frozen corn kernels (used 2 cups)
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24 0z. (3) boneless skinless chicken breasts
chili peppers, chopped (optional)
 
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in.

  3. It looks good! Let me tell you...You're going to love using the CrockPot more than once a year, especially during the chilly winter days. I'll have to bust out some of my crock pot recipes to share with you!

    1. You know its snowed twice in thel ast week, Im not sure why I didnt use it before! Its so simple to add items and leave it while I run errands etc. I would LOVE if you would be willing to share your favorites for the crock pot, Im on the hunt!
